A new invasive crawfish species has been discovered in Wisconsin.
Wisconsin’s waters have a new invasive species. A red swamp crawfish was found last month in a Washington County subdivision pond.
The crawfish is considered a danger to native fish, crawfish and frogs.
The red swamp crawfish is native to Louisiana and often sold to restaurants.
Wildlife officials are concerned about the discovery because the crawfish reproduces prolifically and can move overland to spread in nearby waters. The pond
where it was found is near the Menomonee River, a tributary of Lake Michigan.
Since this is a Louisiana species of crawfish the proper terminology for it would be a crawdad or “MuddBugg” and my advice to people in Wisconsin is to get out there and catch you a mess of them, they make great catfish bait or even better put’em in a pot with some Zatarain’s and boil’em up. Throw in a few new potatoes and some corn on the cob and you have got yourself some good eatin’ cajun style. Enjoy!

Dear Gary,
I’m sorry. One of our Louisiana red swamp crawfish must have escaped the boiling pot and made it up to Wisconsin water. Hope y’all can catch it before it becomes a problem.
Speaking on behalf of the Louisiana Crawfish Promotion and Research Board under the auspices of the Louisiana Department of Agriculture and Forestry (LDAF), when you refer to crawfish associated with Louisiana, please call them crawfish. Mudbugs and crawdads are not what we eat. We eat crawfish.

Mr. Irwin, sorry for my incorrect reference. Yes I’m sure as a commercial interest, my terminology for the crawfish was incorrect. All I know is as a college student in Lake Charles with a roomate whose dads farmed those critters, they are best boiled with corn and new potatoes no matter what you call them. I suppose the term “muddbuggs” isn’t as appetizing if you have never tasted one, but if your like me thats gets the tastebuds going like Pavolv’s dogs when they heard the bell ringing . I think the people in Wisconsin are very lucky to have the new “Crawfish” to add to their menu.
Support the Louisiana Crawfish and Promotion Board by eating more crawfish more often, they are a delicious main course or as a snack. You can sit and eat them like popcorn while watching TV or studying or just about anything once you get the knack of peeling them without looking. Try new recipes for crawfish, there are thousands of delicious recipes out there. Go to Google and put in Crawfish Recipes. Crawfish etouffee is one of my favorites and there is a video on how to make it at cajunmeal.com if you want to try it.
